Ecco tre ristoranti che li celebrano.<\/p>\n<p>L\u2019antipasto \u00e8 una componente storica della cucina italiana, sebbene la sua diffusione come lo intendiamo oggi sia datata tra il Settecento e l\u2019Ottocento. Alberto Grandi, professore di Storia del cibo all&#8217;Universit\u00e0 di Parma, sostiene che la concezione moderna dell&#8217;antipasto deriva dalla cucina francese del XVII secolo. L&#8217;italianizzazione dell&#8217;antipasto inizi\u00f2 con Pellegrino Artusi nel 1891, che lo descrisse nel suo celebre libro &#8220;La scienza in cucina e l&#8217;arte di mangiar bene&#8221;.<\/p>\n<p>Negli ultimi decenni, l&#8217;antipasto si \u00e8 consolidato come tradizione nelle diverse regioni italiane. Oggi, l&#8217;alta cucina lo reinventa come un momento di condivisione, con una pluralit\u00e0 di piatti serviti simultaneamente. Ecco tre ristoranti che esemplificano questa tendenza.<\/p>\n<p>Inc\u00f6: Lo chef Simone Cantafio, all&#8217;interno dell&#8217;Hotel La Perla di Corvara, propone un percorso culinario che inizia con un antipasto all&#8217;italiana, seguito da piatti da condividere e dessert. Gli antipasti, serviti in sei portate simultanee, comprendono:<\/p>\n<p>&#8211; Cannelloni farciti di stinco e gratinati al tartufo nero<br \/>\n&#8211; Brodo di manzo chiaro<br \/>\n&#8211; Lumache all\u2019arrabbiata<br \/>\n&#8211; Polpette di salsiccia e finocchietto<br \/>\n&#8211; Crostoni di pane con pat\u00e8 di fegatini di montagna<\/p>\n<p>SanTommaso 10 di Lavazza: Gabriele Eusebi, chef del ristorante, rende omaggio alla cucina italiana degli anni &#8217;80 con un &#8220;Carosello di antipasti&#8221;. Piatti iconici includono:<\/p>\n<p>&#8211; Carpaccio di ventresca con rucola e bottarga<br \/>\n&#8211; Cr\u00eape suzette di razza con salsa all\u2019arancia<br \/>\n&#8211; Insalata russa reinterpretata come una cassata<\/p>\n<p>Eusebi descrive gli antipasti come il biglietto da visita del ristorante, puntando sull&#8217;informalit\u00e0 e sulla condivisione.<\/p>\n<p>Une: Giulio Gigli, dopo esperienze internazionali, ritorna in Umbria e apre Une, un ristorante che celebra le materie prime locali con un tocco contemporaneo.
